This wine is dedicated to the ancient inhabitants of our cellars, carved into the tuff— a porous volcanic rock formed from consolidated ash and debris, known for its ability to regulate humidity and maintain optimal conditions for wine aging. During excavations, numerous traces of prehistoric elephants were discovered.
Grapes: Sangiovese, Montepulciano, and Merlot
Soil: Limestone-clay
Vinification
Separate fermentation in stainless steel tanks for each grape variety. Malolactic fermentation in cement vats. Blending in mid-January, with bottling in February.
Aging
Aged in cement vats with micro-oxygenation, followed by 2 months in the bottle.
Tasting Notes
Intense ruby red with light violet hues. A youthful wine with a vinous and fruity character, revealing notes of sour cherries and red berries. It offers good structure and balance, with well-integrated tannins and a savory finish.
Food Pairing
Pairs well with charcuterie and cheese platters, rustic pâtés, classic amatriciana and other pasta dishes with sauce. It also complements main courses such as milk-braised pork, grilled meats, mixed boiled meats, and hard cheeses.
