After 20 days of maceration, the wine undergoes a 12-month aging process in used oak barrels and large casks, followed by an additional 12 months in cement tanks. Bottled without filtration or stabilization, this elegant wine captivates with its aromas of cherry, plum, spices, and balsamic notes, accompanied by a velvety and persistent tannic structure. With a dense color ranging from ruby red to purple, GEOS unveils intense aromas of red plum and cherry on the nose, evolving into hints of juniper and pepper, complemented by balsamic and pleasantly herbaceous nuances. On the palate, it is easy-drinking and fragrant, with a balanced body and concentration enhanced by vibrant freshness. This wine is crafted from a harmonious blend of 50% Sangiovese, 50% Cabernet, Syrah, and Merlot sourced from various parcels of the estate. After careful vinification involving spontaneous fermentation and maceration for approximately 7 days, the wine is aged for 12 months, partly in stainless steel and partly in cement tanks. It is then bottled without filtration or stabilization and undergoes an additional refinement of at least six months in the bottle. With its ruby color, it exudes a rustic and spicy character on the nose, accompanied by notes of wildflowers, red fruits, and spices. On the palate, it is easy-drinking, direct, joyful, and refreshing. IPOGEO pairs perfectly with simple dishes, charcuterie, white meats, and grilled vegetables.
