Discover IPOGEO Fattoria Castellina 2020, an IGT Toscana Rosso wine that embodies the essence of its vineyard. This wine is crafted from a harmonious blend of 50% Sangiovese, 50% Cabernet, Syrah, and Merlot sourced from various parcels of the estate. After careful vinification involving spontaneous fermentation and maceration for approximately 7 days, the wine is aged for 12 months, partly in stainless steel and partly in cement tanks. It is then bottled without filtration or stabilization and undergoes an additional refinement of at least six months in the bottle. With its ruby color, it exudes a rustic and spicy character on the nose, accompanied by notes of wildflowers, red fruits, and spices. On the palate, it is easy-drinking, direct, joyful, and refreshing. IPOGEO pairs perfectly with simple dishes, charcuterie, white meats, and grilled vegetables. It also complements well with refreshing summer cold dishes.
