Clivus Soave Classico: The Elegance of a Volcanic Terroir

Clivus Soave Classico: The Elegance of a Volcanic Terroir

A terroir shaped 50 million years ago
The hills of Monteforte d’Alpone and Soave are rooted in an extraordinary geological past. This land is made of dark volcanic basalt soils with reddish and silvery hues, rich in minerals — the legacy of an ancient marine landscape. These soils give the wine a distinctive minerality and remarkable depth, hallmarks of the Cantina di Monteforte tradition.

This volcanic soil, a remnant of ancient underwater eruptions, is a true geological signature. It enriches the grapes with minerals, giving Clivus Soave Classico its vibrant freshness and distinctive saline edge compared to other Italian white wines.

A harmonious and expressive wine
Made primarily from the native Garganega grape, sometimes complemented by Trebbiano di Soave, Clivus Soave Classico captures the vibrant character of its terroir.

Tasting notes

  • Color: straw yellow with greenish highlights

  • Nose: delicate floral bouquet (hawthorn, elderflower, violet) with hints of peach, white-fleshed fruit, and sweet almond

  • Palate: fresh and well-structured, balancing roundness and minerality, with a citrus lift and a slightly salty, pleasantly bitter finish typical of Garganega

Cantina di Monteforte: a cooperative dedicated to its land
Founded in March 1952 by a handful of winegrowers, the Cantina Sociale di Monteforte now has nearly 600 members cultivating between 1,200 and 1,300 hectares of vines. It is one of the largest cooperatives in the Soave appellation. In the late 1950s, the cooperative launched its bottling program, creating the Clivus brand as a symbol of quality and identity. Today, it produces around 4 million bottles annually.

Respectful and innovative viticulture
Vines are often planted on steep, rocky slopes, farmed with a strong commitment to sustainability, biodiversity, and careful yield management. Harvesting in small bins, rapid grape cooling, extended contact with fine lees, and minimal sulfur use ensure the purest expression of the terroir.
