Yule Log with TOSCHI Fragoli Liqueur
Ingredients:
- For the sponge cake:
- 4 eggs
- 120g sugar
- 120g flour
- Pinch of salt
- 2 tablespoons TOSCHI Fragoli Liqueur
- For the filling:
- 250g mascarpone
- 3 tablespoons TOSCHI Fragoli Liqueur
- 100g powdered sugar
- 200g fresh strawberries, sliced
- For the glaze:
- 200g dark chocolate
- 200ml heavy cream
- 2 tablespoons TOSCHI Fragoli Liqueur
Preparation:
- Sponge Cake:
- Preheat the oven to 350°F (180°C).
- Whisk eggs and sugar until the mixture becomes pale. Gently fold in the flour and salt.
- Spread the batter on a baking tray lined with parchment paper and bake for 12-15 minutes.
- Once out of the oven, lightly soak the sponge cake with TOSCHI Fragoli Liqueur.
- While still warm, roll the sponge cake with the parchment paper to shape it and let it cool.
- Filling:
- Mix mascarpone, powdered sugar, and TOSCHI Fragoli Liqueur until smooth.
- Carefully unroll the sponge cake and spread the mascarpone cream over it. Lay the strawberry slices evenly.
- Roll the sponge cake again to form the log.
- Glaze:
- Heat the cream in a saucepan. Off the heat, add chopped chocolate. Stir until smooth. Mix in the TOSCHI Fragoli Liqueur.
- Let it cool for a few minutes, then coat the log with the chocolate glaze.
- Refrigerate for at least 3 hours before serving. For a final touch, garnish with strawberries or chocolate shavings.
